Instructions

  1. Weigh out and combine all wet ingredients (pasteurized process American cheese, water, whole milk, heavy cream, brown butter concentrate, canola oil, lactic acid).  
  2. Weigh out and combine all dry ingredients (corn starch, nonfat dry milk, xanthan gum, sodium citrate, salt). 
  3. Add wet ingredients to mixing kettle while heating with shear mixing. 
  4. At 140°F, add dry ingredients to mixer while continuing to heat with shear mixing. 
  5. Heat to 175°F with continuous shear mixing.
